Mima Kitchen: A Neo-Moroccan Journey

At the heart of The View Hotel's gastronomic offering lies Mima Kitchen, a restaurant that pays homage to Morocco’s rich culinary heritage while embracing modernity. Chef Assia Manar, who's cooked for celebrities, royal families and regularly appears on TV in Dubai, skilfully combines ancestral recipes with contemporary techniques, resulting in a menu that's both innovative and deeply rooted in tradition. Signature dishes highlight Morocco’s renowned spices, flavours, and colours, offering diners an immersive experience of the country’s culinary soul.

Chef Manar is deeply dedicated to bringing Moroccan culinary traditions to life with a creative and contemporary twist. Her restaurant is brilliant in its ability to merge time-honoured Moroccan recipes with modern techniques, creating an innovative dining experience. Chef Manar uses locally sourced ingredients to highlight the vibrant flavours of Moroccan cuisine, presenting dishes that are both authentic and visually striking.

Mima Kitchen’s interior mirrors this fusion of old and new. Modern design elements, such as clean lines and open spaces, are complemented by traditional Moroccan touches, creating a bright and chic ambiance. Floor-to-ceiling windows offer stunning views of the hotel’s lush gardens, further enhancing the dining experience.

Meanwhile, the menu also showcases a blend of traditional Moroccan fare and inventive creations:

  • Starters: An assortment of Moroccan salads such as taktouka, zaalouk, and caramelised pumpkin, along with crispy pastries like briouates stuffed with minced meat and m’hencha with smoked salmon.

  • Mains: Signature dishes include Couscous Tfaya with chicken and raisins, Lamb Shank Mrouzia with dried fruits, and a Tagine of Coquelet M’qalli, marinated in preserved lemon and red olives.

  • Desserts: Moroccan pastries and modern takes such as Tayri, a light mousse of amlou with orange confit, and Jawhara, a layered dessert with orange marmalade and crème anglaise.

Le Sensya: A Taste of Modern Italy

In Chef Francesco Franzese, The View has a real coup. Together with his wife, Maria who leads the front-of-house team, they are the masterminds behind Le Sensya – an Italian fine dining restaurant. Franzese earned a Michelin star in his previous role, which highlights his dedication to innovation and culinary artistry. At Le Sensya, he brings his Italian heritage to life with a focus on authenticity and contemporary flair.

The restaurant’s menu reflects Franzese’s deep passion for classic Italian cuisine. Dishes are arranged in traditional Italian courses — starters, primi (pasta), and secondi (mains). He is particularly known for his creative use of truffles, which enhance the flavours of several pasta and meat dishes. The seafood offerings, such as light and delicately prepared sea bass and prawn dishes, showcase his skill in balancing simplicity with refinement. Dishes such as the Spigola (sea bass with black lentils cooked in seawater, served with seaweed mousse) and the Tonno Agli Agrumi (marinated tuna, citrus sauce, ginger and black garlic), are breathtakingly sublime, while the Capelli d'Angelo (angel hair pasta with garlic, chilli, herring caviar, anchovy sauce and seaweed powder) is a masterpiece and quite honestly one of the best pasta dishes I've ever had!

Le Sensya provides an elegant escape at The View. Here you will find a creative menu that reinterprets Italian classics with a Mediterranean twist. The use of fresh, locally sourced ingredients ensures that every dish bursts with flavour and authenticity.

Le Sensya’s decor, meanwhile, is as delightful as its cuisine. The green-and-white palette, paired with lush vegetation and wooden accents, evokes a serene Italian garden. Immense glass windows flood the space with natural light, and the sublime terrace invites diners to savour their meals while enjoying views of the gardens and pools. The restaurant’s cosy yet sophisticated atmosphere encapsulates the spirit of dolce vita.
