The Michelin Guide made history in 2021 with its first-ever selection of fine dining establishments in Moscow, featuring 69 restaurants in total. Among them, nine were awarded the prestigious one-star rating, while two earned two stars. However, the guide’s first-ever Moscow edition also marked another milestone — the recognition of Michelin’s first-ever Michelin starred twins, Ivan and Sergey Berezutsky, the masterminds behind Twins Garden.

A Culinary Vision Rooted in Science and Nature

Twins Garden, located on Strastnoi Boulevard in Moscow, is a restaurant that embodies the philosophy of sustainability, science, and local Russian ingredients. The identical twin chefs, Ivan and Sergey Berezutsky, are renowned for their innovative approach to fine dining, crafting a menu that seamlessly integrates modern culinary techniques with nature’s bounty. Sourcing much of their produce from their own farm, the brothers are dedicated to showcasing Russia’s rich agricultural diversity while maintaining a firm commitment to sustainability.

"Our goal is to rediscover the flavours of Russia," explains Ivan. "We want to bring forgotten tastes back to life using the best local ingredients, combined with cutting-edge techniques."

Pioneering a Vegetable-Centric Wine List

One of Twins Garden’s most groundbreaking contributions to Moscow’s fine dining scene is its unique collection of vegetable-based wines. Offering 14 different varieties, these wines challenge traditional perceptions of fine dining beverages. The restaurant presents vegetables in an entirely new light — not only on the plate but in the glass as well. Guests can experience daring pairings such as flowers and parsley, carrot and black truffle, and beetroot with birch boleta.

Twins Garden also boasts the largest collection of wines in Russia, with more than 1,500 varieties on offer. Many of these are real rarities, and can be tasted exclusively here.

Rediscovering Russian Cuisine

At the heart of Twins Garden's offerings is the "Made in Russia" tasting menu, a tribute to regional cuisines spanning from Murmansk to the Kuril Islands, and from Astrakhan to Arkhangelsk. The tasting menu offers an immersive experience into Russia’s culinary diversity.

Dishes to have appeared on the menu include:

  • Seafood Specialties: Far Eastern whelk, Kamchatka crab soup, and snelma (a type of whitefish) served with a seedling sauce.

  • Meat Delicacies: Goatling and bull tartare accompanied by smoked cherries.

  • Innovative Starters and Desserts: A salad featuring goose, spicy eggplant, and baked plums; and a dessert comprising airy buckwheat cream, caramel, porcini mushroom ice cream, and birch vinegar dressing.

Michelin Recognition: A Historic Moment for Moscow’s Gastronomy

The Michelin Guide’s expansion into Moscow was met with excitement, and the Berezutsky twins recognise the significance of this moment not just for their restaurant but for the city’s entire dining scene.

"It doesn't matter whether it's New York, London, or Moscow — the criteria remain the same," says Ivan. "The most important thing is to justify the trust of our guests."

He adds, "It’s a historic event for the whole restaurant market. Moscow has truly become one of the gastronomic capitals of the world."

Twins Garden’s two Michelin stars is not just a personal triumph for the Berezutsky brothers but a testament to Moscow’s growing culinary prestige. With their innovative approach to Russian cuisine and unwavering dedication to sustainability, Ivan and Sergey are setting a new standard for fine dining in the city, cementing their place in gastronomic history.
